I love chia pudding because it really feels like you are eating something decadent, as any treat should but this pudding won’t spike your blood sugar. Chia is full of omega 3 fatty acids, fiber, magnesium and plant protein. The best part about this dessert is that because it’s so healthy you can eat it for breakfast or a snack as well.
The addition of the toasted coconut flakes and cacao nibs gives the pudding a little crunch factor that I totally love but you could also add a few fresh berries. I like a pinch of good quality flaked or coarse sea salt on top as well.
