Possibly the hardest meal of the day for my clients with autoimmune issues is breakfast. Often we need to remove eggs from the diet for a short period of time for some and some it’s a little longer. The biggest complaint I get is what to eat for breakfast when grains, a smoothie and eggs are not options. Making your own breakfast sausage only takes minutes and you know what you’re eating.
I used naturally sweetened cranberries found at a health food store. The ones I used for this recipe are sweetened with maple syrup. Look for spice blends at health food stores that don’t contain vegetables oil, additives or MSG.
Turkey Cranberry Breakfast Sausage
Serves 4
Ingredients
- 1 pound ground turkey
- 2 tsp. poultry seasoning spice
- 1 tsp. garlic & herb seasoning mix (salt free)
- ½ tsp. sea salt or Herbamare
- 3 Tbsp. dried naturally sweetened or unsweetened cranberries
- 1 Tbsp. coconut oil
Directions
- Combine the turkey, spices and cranberries together in a bowl until well combined.
- Form a the turkey mixture into small round patties.
- Heat a non-stick skillet over medium heat and add the coconut oil. Fry the patties on each side until golden brown, around 4 – 5 minutes a side or until no longer pink in the center.
- Transfer to a plate and allow to rest for a few minutes before serving.
