This muffin recipe is really quick to make. Everything goes into a food processor making it quick and easy to clean up. You will never know these muffins are missing dairy, gluten or sugar. Enjoy!
Grain Free Banana Muffins
Makes 18 muffins
4 ripe bananas (2 cups mashed)
4 tablespoons ground flaxseed
2 tablespoons melted coconut oil
1/2 cup nut butter (I used almond chia butter)
1/4 cup coconut milk
4 eggs, room temperature
1 tablespoon vanilla extract
2 cups almond flour
1/3 cup coconut flour
1 tsp baking soda
2 tsp baking powder
1/2 tsp sea salt
1/2 cup dark chocolate chips (I used Ghirardelli) plus Lindt dark chocolate with sea salt for the top of each muffin
Directions:
- Preheat the oven to 350 degrees F. Line 2 muffin tins with paper or parchment liners.
- Place the bananas, flax, coconut oil, eggs and vanilla extract in the bowl of a food processor. Blend until smooth.
- Add the almond flour, coconut flour, baking soda, baking powder and sea salt. Blend until smooth.
- Stir in the chocolate chips.
- Divide the batter evenly into the prepared muffin pans. Break 2 – 3 squares of Lindt chocolate into small chunks and place a little piece on top of each muffin. Place in the oven and bake for approximately 20 minutes.
